This class provides the student with a foundation in Garde Manger of the cold kitchen. Basic salad preparations, vinaigrettes, emulsified and non-emulsified dressings, cold sauces, salad condiments, sandwiches, canapés, cold hors d'oeuvres are covered in this class.
